Take A Break – Strawberry Daiquiri

It’s below freezing up here in northern New England, and it will be below freezing for the whole day, even with the sun shining! 😔 Sometimes I ask myself why I do this to myself, then I remember it’s really nice here if you don’t mind the cold. So on days where I miss the warmer days I look to my cupboard and fridge (is it any wonder I am on a diet?) to cheer me up. Why not a nice strawberry daiquiri, with an umbrella garnish? 😄 What else to remind me of summer?

This recipe is tweaked from an epicurious.com recipe for strawberry daiquiri.

• 1 1/2 cup ice

• 8 large strawberries

• 2 ounces dark rum, (Jamaican or Puerto Rican rum)

• 1/2 cup of simple syrup

• 1 fresh squeezed lime

Place all ingredients into the blender and blend (you can use the word swooj) until combined. Pour into tall glass and enjoy.
